I put together this pasta dinner for my family when I was home and I must say I was very pleased with how it turned out. Every one really enjoyed it and I will definitely do it again soon.
1/2 lemon, zest and juice
250 ml cream
250 g Fresh pasta
1/2 red onion, finely chopped
1 clove garlic
Pasta and sauce:
Fry the onion and garlic with olive oil in a frying pan. Add the chopped walnuts and fry until the onion is soft and walnuts got a nice colour.
Pour in the cream and zest and juice from the lemon, season with salt and pepper. Meanwhile cook the pasta al dente , reserving some of the pasta water. Add some of the pasta water to the sauce, also add the pasta and let cook it all together for just a minute so the pasta cooks to perfection.
Fry the vegetables with a splash of oil in a grill pan until cooked but let the asparagus still be crisp on the inside.
