Yesterday we had one left over pice of schnitzel laying around plus dad requested something light and fresh for diner. So I made a salad with a lemon dressing, fried the schnitzel, sliced it and topped with some roasters almonds.


Recipe:
Dressing:
3/2 dl olive oil
1/2 lemon, zest ond juice
2 tsp honey
1/3 red onion, finely sliced
salt
- Mix all the ingredients and let stand until serving. If you want the onion to get a milder flavour, let it stand of longer, I usually do it a couple hours before starting cooking but that is absolutely not necessary.
One of the greatest things about this salad is that you can just grab whatever you have a home, this is what I had this time:
lettuce
tomatoes
grilled zucchini
champignon
one left over schnitzel
almonds, chopped and toasted
