Soups are definitely one of my go to meals when I don’t really have a clear idea of what I want to cook and don’t have lots of time. Usually when I make a spontaneous soup I basically just start with an onion and then add whatever vegetables I have in my freezer or fridge and then add flavouring depending on what I feel. Here is a really basic recipe but it always tuns out soooo good!!

Recipe (for 4 portions)
Ingredients:
Olive oil
1 onion
700 ml vegetable stock
500g frozen green peas
A splash of withe wine (optional, could be substituted with apple-or white wine vinegar)
Salt and pepper to saste
Crème fraîche, yogurt, cream or goat cheese to dollop at serving
Method:
Peel and roughly chop the onion and fry in a saucepan with the oil
When soft, add the stock and peas and let it simmer for 5 minutes.
Mix smooth, here you can choose to either mix it silky smooth or leve a bit chunky.
Season to taste and add top with your choice of “creaminess”
