For a few weeks ago I bought Jamie Oliver’s book: Jamies Italien. I don’t have that many cooking books cause I feel quite overwhelmed when I have too many options. When feeling like cooking something I would either look through lots of them and then not be able to make up my mind or I would just realise this before and spare myself the effort and just not bother at all. And since I don’t often use recipes i like books that give me inspiration, like this book.
I felt like I was in a hurry today just before lunch but I was just so hungry and still wanted to cook something delicious. So I just opened a random page in the pasta chapter, read through the method quickly and ran to the kitchen.
It was time for me to start cooking, a bit to late to realise that I didn’t have any spaghetti, I never stop surprising myself. But what I did have was some lasagna sheets, so cooked them in salted water and just cut them in half, lengthwise, when they were ready. In the meanwhile I chopped some almonds in a food processor (if I wouldn’t have been that extremely hungry I would definitely roast them in a dry pan first) then I added a grated garlic clove, some chopped basil, a splash of lemon juice, salt, olive oil and parmesan. I did what I remembered the most out of the recipe and crushed a tomato with my bare hands, savage.
I mixed the “sauce” with the pasta and topped with mozzarella and a drizzle of olive oil.
The result: excellent!
